Biscuits and gravy. Oh how I love thee biscuits and gravy! <—–Me one and a half years ago. I then decided to go pescatarian. No more biscuits and gravy for me, dang! Growing up, my Gramma Ellen would make it for me from scratch. I sure miss those summers in the country!
In the past, I made my sausage gravy with turkey sausage, it was good! Now it’s even better! The key was finding a vegetarian friendly sausage that didn’t taste disgusting. I’ve tried many faux sausage products and this one is by far my favorite. I also really liked the Gimme Lean veggie sausage from Lightlife. It comes raw in a tube similar to the real deal though, so you have to form your own patties. Yummy, but not as quick as these babies.
This breakfast comes together very quickly. I start the biscuits first since they take the longest. Sometimes, I use the frozen kind, ain’t no shame in my biscuit lovin’ game! I then make a quick roux out of butter and flour and finish it off with the milk.
While I let the gravy go, I pop the sausages in the microwave until they are no longer frozen, then dice them up and toss them into the gravy. Comforting, fast and delicious! I tricked my family with it the first time I made it, they couldn’t even tell! Just for kicks, I joke with my son on the daily that he will soon be a vegetarian too, so far, he’s a no go.
Vegetarian Sausage Gravy
Ingredients
- 3 tbsp butter
- 3 tbsp flour
- 4 cups milk* almond, or cow's
- 5 sausage patties
- 1 tsp salt
- 1 tsp pepper
Instructions

Warm sausage patties according to package instructions. I like to put them in the microwave for about 60 seconds. Dice them up and set aside.

In a skillet, melt the butter. Sprinkle the flour over the butter and cook for about 1 minute to cook the rawness out of the flour.

Add 1 cup of the milk, whisk until no clumps remain. Pour in the remaining milk.

Let gravy cook until thickened. Once thickened, add the sausage pieces.

Pour gravy over biscuits and enjoy
